- 1 large eggplant, diced
- 1 large onion, diced
- 3 Tbsp. margarine
- 3 Tbsp. flour
- 1 can stewed tomatoes
- 3 Tbsp. brown sugar
- bread crumbs
Directions

1Cook diced eggplant.

2Drain.

3Saute onion in margarine.

4Add flour to thicken.

5Stir in tomatoes and brown sugar.

6Pour over eggplant and put in casserole dish.

7Sprinkle bread crumbs on top. Bake at 350° for 15 to 20 minutes.
