Ingredients

  • 1 or 2 eggplant
  • 1 c. soda cracker crumbs
  • 1/2 c. milk
  • 1 egg, beaten
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 medium onion, chopped
  • 2 Tbsp. melted oleo
  • 1 can creamed soup (any type)

Directions

    Peel and cube eggplant; cook in salted water until tender. Drain and add remaining ingredients.

    Place in greased casserole and may top with shredded cheese.

    Bake at 350° approximately 30 minutes.
