- 1 medium eggplant, sliced
- 1 c. sliced mushrooms
- 1 c. Weight Watchers spaghetti sauce
- 1 c. grated cheese
- sweet basil
Directions

1Spray small casserole with Pam.

2Add sliced eggplant, mushrooms and 1/3 cup grated cheese, mixed together.

3Sprinkle basil over ingredients or other herbs and spices to suit your taste.

4Cover with spaghetti sauce (add more basil, if desired). Add remaining cheese.

5Bake at 375° for 30 to 40 minutes.
