- 2 medium eggplant
- 1 large onion, chopped
- 1 pkg. bacon
- 2 cans diced tomatoes
- 1 lb. Colby cheese, diced
- 1 small bag shredded Mozzarella cheese
- 1 can bread crumbs
Directions

1Peel eggplant and cut into small dices.

2Parboil until soft. Drain.

3Cut bacon into small pieces and fry.

5Mix all ingredients together in 9 x 13-inch baking dish.
