  • eggplant
  • 4 c. loaf bread, torn in small pieces
  • 1/3 to 1/2 lb. sausage
  • 1/2 tsp. sage
  • 1/4 c. minced onion
  • 1/2 c. chopped celery
  • 1 bouillon cube or 1 tsp. granulated bouillon, dissolved in 1/2 c. water
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

    Peel eggplant and cut in chunks.

    Boil 10 minutes in salted water.

    Drain.

    Saute sausage and onion until done.

    Add bread, celery, spices and bouillon.

    Mix in cooked eggplant and bake 30 minutes at 350°.
