- eggplant
- 4 c. loaf bread, torn in small pieces
- 1/3 to 1/2 lb. sausage
- 1/2 tsp. sage
- 1/4 c. minced onion
- 1/2 c. chopped celery
- 1 bouillon cube or 1 tsp. granulated bouillon, dissolved in 1/2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Peel eggplant and cut in chunks.

2Boil 10 minutes in salted water.

3Drain.

4Saute sausage and onion until done.

5Add bread, celery, spices and bouillon.

6Mix in cooked eggplant and bake 30 minutes at 350°.
