Ingredients
- 1 medium eggplant
- 1 stick margarine
- 1/2 c. onion, chopped
- 1/2 c. bell pepper, chopped
- 1 (No. 2) can tomatoes
- 2 Tbsp. brown sugar
- 2 Tbsp. flour
- bread crumbs
- sharp grated cheese for topping
Directions

1Peel eggplant.

2Slice and soak in cold water for 30 minutes. Drain.

3Drop in boiling water and cook until tender.

4Drain.

5In skillet, put onions, pepper and margarine.

6Cook slowly for 10 minutes.

7Add flour, sugar and tomatoes.

8Cook until thickened.

9In baking dish, add part of vegetable mixture.

10Add layer of eggplant, then rest of vegetables.

11Cover the top with bread crumbs.

12Bake 30 minutes at 350°.

13Remove from oven the last few minutes of baking time.

14Sprinkle top with cheese.

15Return to oven to melt cheese.
