- 2 c. cooked eggplant, cubed
- 1 Tbsp. onion, chopped
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 c. milk
- 1/4 tsp. sage
- 1 c. cracker crumbs
- 1 c. American cheese, cubed
- 2 eggs, beaten
Directions

1Add butter to hot eggplant; mix until melted.

3Pour into greased casserole dish.

4Bake at 325° until center rises, about 30 minutes.
