  • 6 Tbsp. butter
  • 2 c. cooked eggplant, cubed
  • 1 Tbsp. onion, chopped
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1 c. milk
  • 1/4 tsp. sage
  • 1 c. cracker crumbs
  • 1 c. American cheese, cubed
  • 2 eggs, beaten

Directions

    Add butter to hot eggplant; mix until melted.
