- 1 large eggplant, peeled and cubed
- 1 tsp. salt
- 1 lb. mild ground sausage
- 1 medium onion, diced
- 2 Tbsp. olive oil
- 1 can cream of mushroom soup
- 1 c. cracker crumbs
- 1 c. grated Mozzarella cheese
Directions

1Boil eggplant in salt water until tender.

2Brown sausage and drain.

3Saute onion in olive oil and add to eggplant and sausage. Combine mushroom soup seasoned with salt and pepper.

4Add cracker crumbs.

5Place mixture into a casserole.

6Sprinkle with cheese. Bake at 425° for 30 minutes.
