Eggplant Casserole

  • 1 large eggplant, peeled and cubed
  • 1 tsp. salt
  • 1 lb. mild ground sausage
  • 1 medium onion, diced
  • 2 Tbsp. olive oil
  • 1 can cream of mushroom soup
  • 1 c. cracker crumbs
  • 1 c. grated Mozzarella cheese

Directions

    Boil eggplant in salt water until tender.

    Brown sausage and drain.

    Saute onion in olive oil and add to eggplant and sausage. Combine mushroom soup seasoned with salt and pepper.

    Add cracker crumbs.

    Place mixture into a casserole.

    Sprinkle with cheese. Bake at 425° for 30 minutes.
