Ingredients
- 1 eggplant
- 3 Tbsp. butter
- 1/2 c. grated cheese
- 1/2 c. chopped onion
- 1 beaten egg
- dash of salt and pepper
- grated cheese
- Pepperidge Farm herb dressing
Directions

1Boil peeled, cut up eggplant until tender.

2Drain in colander; mash.

3While hot, add butter and 1/2 cup grated cheese plus chopped onion.

4Toss this with beaten egg and dash of salt and pepper.

5Put in shallow baking dish; cover with grated cheese and top with Pepperidge Farm herb dressing.

6Bake at 350° for about 20 minutes.
