- 1 c. chopped tomatoes
- 1/2 c. chopped onions
- 1/2 c. shredded Cheddar cheese
- 1/2 c. butter
- 1/2 c. bread crumbs
- salt and pepper to taste
Directions

1Parboil eggplant until tender.

2Layer with remaining ingredients.

3Melt 1/2 cup butter and mix with bread crumbs. Place on top of layered ingredients.

4Bake about 20 minutes in 350° oven.
