- 2 medium eggplant
- 3 medium onions
- 3 eggs
- 1 stick margarine
- 10 saltine crackers
- 1 c. milk
- 1 1/2 Tbsp. baking powder
- 1 1/2 c. shredded cheese
Directions

1Peel and chop eggplant and onions.

2Boil until tender; drain. Mix until blended the eggs, margarine, milk and crushed saltines. Add eggplant and onions.

3Salt and pepper to taste.

4Beat in 1 1/2 tablespoons of baking powder; cover with cheese.

5Bake in a 3-quart baking dish in a 350° oven until brown, about 30 minutes.
