- 1 large eggplant
- 1 small bell pepper
- 1 small onion
- salt and pepper to taste
- 1 egg
- 3 Tbsp. Parmesan cheese
- 1/2 c. Italian Progresso bread crumbs
Directions

1Cook eggplant until tender.

2Beat up with mixer.

3Add bell pepper and onions that have been sauteed in margarine.

4Add egg, Parmesan cheese and half of the bread crumbs.

5Put in buttered casserole dish and add the bread crumbs to top.

6Bake 25 minutes at 400°.
