Eggplant Casserole

Ingredients
- 1 eggplant or zucchini
- 6 Tbsp. butter
- 1/2 c. minced onion
- 1 c. shredded Cheddar cheese
- 1 c. soft bread crumbs
- 1 can mushrooms
- salt and pepper
Directions

1Cut eggplant in half lengthwise.

2Scoop out and dice.

3Saute in 4 tablespoons butter and cook until tender, stirring often and reserve.

4Melt remaining butter (2 tablespoons).

5Cook onion for 2 minutes.

6Add mushrooms and cook 5 minutes.

7Combine mushroom mixture, eggplant, 1/2 package cheese, bread crumbs, salt and pepper.

8Mix well and sprinkle with remaining cheese.

9Bake 15 to 20 minutes at 375°.

10May be baked in the eggplant shell.
