- 1 eggplant
- 1 c. cheese, diced
- 1 tsp. salt
- 2 eggs
- 1 c. milk
- 1/4 tsp. sage
- 6 Tbsp. melted butter
- 1 c. cracker crumbs
- 1/4 tsp. black pepper
Directions

1Cook the eggplant and when it is done, drain the water off. Put eggplant in large bowl.

2Beat together 1 teaspoon salt, 2 eggs and 1 cup milk.

3Put this mixture in the bowl with eggplant.

4Add the next four ingredients to eggplant and mix all ingredients together.

5Pour into greased casserole and bake at 325° for 30 minutes.
