  • 1 eggplant
  • 1 c. cheese, diced
  • 1 tsp. salt
  • 2 eggs
  • 1 c. milk
  • 1/4 tsp. sage
  • 6 Tbsp. melted butter
  • 1 c. cracker crumbs
  • 1/4 tsp. black pepper

Directions

    Cook the eggplant and when it is done, drain the water off. Put eggplant in large bowl.

    Beat together 1 teaspoon salt, 2 eggs and 1 cup milk.

    Put this mixture in the bowl with eggplant.

    Add the next four ingredients to eggplant and mix all ingredients together.

    Pour into greased casserole and bake at 325° for 30 minutes.
