  • 1 large or 2 small eggplant
  • 2 eggs
  • 1 slice stale bread, broken to pieces
  • 1 small onion
  • 1 small clove garlic
  • 1 small pod hot pepper
  • 1 small pod bell pepper
  • 1 c. chopped ham, bacon or shrimp
  • salt and pepper to taste
  • dash of hot pepper sauce

    Boil eggplant; cool and peel.

    Chop in cubes.

    Add eggs and stale bread, salt and pepper.

    Put ham, bacon or shrimp, onion, garlic, hot pepper and bell pepper in frying pan with a small amount of grease.

    Fry until brown, then add eggplant, eggs and bread to the mixture and cook until done.

    Put in buttered casserole dish and bake at 375° for about 10 minutes.
