Eggplant Casserole

Ingredients
- 1 large or 2 small eggplant
- 2 eggs
- 1 slice stale bread, broken to pieces
- 1 small onion
- 1 small clove garlic
- 1 small pod hot pepper
- 1 small pod bell pepper
- 1 c. chopped ham, bacon or shrimp
- salt and pepper to taste
- dash of hot pepper sauce
Directions

1Boil eggplant; cool and peel.

2Chop in cubes.

3Add eggs and stale bread, salt and pepper.

4Put ham, bacon or shrimp, onion, garlic, hot pepper and bell pepper in frying pan with a small amount of grease.

5Fry until brown, then add eggplant, eggs and bread to the mixture and cook until done.

6Put in buttered casserole dish and bake at 375° for about 10 minutes.
