- 1 large eggplant
- 1 onion
- 1/2 lb. bacon
- 3 eggs
- 12 oz. shredded Cheddar cheese
- 1/2 stick butter, softened
- 1/2 c. cornflakes
- Parmesan cheese
- several pats of butter
Directions

1Cut eggplant into cubes.

2Boil until tender and drain.

3Saute onion.

4Fry bacon and crumble into small pieces.

5Mix together. Add eggs, Cheddar cheese, softened butter and cornflakes.

6Pour into casserole dish.

7Sprinkle with Parmesan cheese and pats of butter.

8Bake at 350° for 30 to 35 minutes.
