Eggplant Casserole

Ingredients
- 2 medium eggplant
- 1 onion, chopped
- 1 green pepper, chopped
- 1 Tbsp. bacon drippings
- 1 egg, beaten
- 1 c. bread crumbs (seasoned)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3/4 c. grated cheese
- 1 to 2 Tbsp. picante sauce
- 1/2 c. grated Parmesan cheese
Directions

1Peel eggplant and cook until tender. Drain well and mash. Saute onion and green pepper in bacon drippings.

2Remove from heat and add egg, salt, pepper and onion mixture.

3Spoon half of the mixture into greased 1 1/2-quart casserole. Sprinkle with cheese. Spoon remaining eggplant over the cheese and top evenly with picante sauce. Sprinkle with Parmesan.

4Bake at 350° for 30 minutes.
