- 1 medium eggplant, peeled and sliced
- 1 1/2 c. saltines, crumbled
- 4 eggs
- 1/2 tsp. pepper
- 1 stick margarine, melted
- 1 1/2 c. milk
- 1 tsp. salt
- 1 1/2 c. sharp cheese, grated
Directions

1Cook eggplant until mushy; drain.

2Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and a small amount of margarine.

3Mix well.

4Pour into baking dish; sprinkle with remaining cheese, cracker crumbs and melted margarine.

5Bake at 325° to 350° for 25 to 30 minutes.
