- 1 medium to large eggplant, cubed
- 6 Tbsp. butter
- 1 large onion, chopped
- 2 slices bread, cubed
- 1 c. Cheddar cheese, cubed
- 1 c. small can milk
Directions

1Soak eggplant in salt water for 30 minutes.

2Drain.

3Saute eggplant and onion in butter in frying pan until tender.

4Mix in cheese, bread and milk.

5Put in casserole dish.

6Bake 30 minutes in 350° oven.
