Eggplant Casserole

  • 1 medium to large eggplant, cubed
  • 6 Tbsp. butter
  • 1 large onion, chopped
  • 2 slices bread, cubed
  • 1 c. Cheddar cheese, cubed
  • 1 c. small can milk

Directions

    Soak eggplant in salt water for 30 minutes.

    Drain.

    Saute eggplant and onion in butter in frying pan until tender.

    Mix in cheese, bread and milk.

    Put in casserole dish.

    Bake 30 minutes in 350° oven.
