- 2 c. eggplant, cooked and drained
- 1 medium chopped onion
- 1 or 2 cans whole tomatoes, drained
- 4 eggs
- 1 c. bread crumbs
- 1 1/2 c. grated cheese
- 2 Tbsp. bacon grease or butter
Directions

1Saute onion in bacon grease or butter and add tomatoes and eggplant (mashed slightly with potato masher).

2Add eggs; stir in cheese.

3Add bread crumbs.

4Top with remaining crumbs.

5Bake at 350° for 20 to 25 minutes.
