  • 2 c. eggplant, cooked and drained
  • 1 medium chopped onion
  • 1 or 2 cans whole tomatoes, drained
  • 4 eggs
  • 1 c. bread crumbs
  • 1 1/2 c. grated cheese
  • 2 Tbsp. bacon grease or butter

Directions

    Saute onion in bacon grease or butter and add tomatoes and eggplant (mashed slightly with potato masher).

    Add eggs; stir in cheese.

    Add bread crumbs.

    Top with remaining crumbs.

    Bake at 350° for 20 to 25 minutes.
