- 1 medium size eggplant, peeled and sliced
- grated onion
- bell pepper
- 1 beaten egg
- 1/2 can Ro-Tel tomatoes
- 1/2 can mushroom sup
- garlic salt
- salt and pepper to taste
- 1 1/2 c. cheese
- butter
- 1 1/2 c. cracker crumbs
Directions

1Cook eggplant in small amount of water for 10 minutes; drain. Add grated onion, bell pepper, beaten egg, Ro-Tel tomatoes, mushroom soup, garlic salt and salt and pepper to taste.

2Grate cheese.

3Melt butter and pour over cracker crumbs; mix.

4Butter baking dish well.

5Add in layers the eggplant, cheese and crumbs, making 2 layers.

6Bake for 30 minutes at 375°.
