Eggplant Casserole

Ingredients

  • 1 medium size eggplant, peeled and sliced
  • grated onion
  • bell pepper
  • 1 beaten egg
  • 1/2 can Ro-Tel tomatoes
  • 1/2 can mushroom sup
  • garlic salt
  • salt and pepper to taste
  • 1 1/2 c. cheese
  • butter
  • 1 1/2 c. cracker crumbs

Directions

    Cook eggplant in small amount of water for 10 minutes; drain. Add grated onion, bell pepper, beaten egg, Ro-Tel tomatoes, mushroom soup, garlic salt and salt and pepper to taste.

    Grate cheese.

    Melt butter and pour over cracker crumbs; mix.

    Butter baking dish well.

    Add in layers the eggplant, cheese and crumbs, making 2 layers.

    Bake for 30 minutes at 375°.
