Eggplant Casserole

Ingredients

  • 1 medium eggplant, peeled and cubed
  • 1 med onion, diced small
  • 2 slices toast, cubed
  • 1 cup milk
  • 4 to 5 Tbsp butter
  • 1/4 tsp ground cayenne pepper
  • 1 egg
  • 3/4 cup grated cheese
  • black pepper and salt to taste

Directions

    Cook eggplant with onion in a small amount of salted water until done, and drain.

    Beat 1 egg and add to milk, pour over toast cubes and allow to set a few minutes. To eggplant add cheese, butter, black and red pepper.

    Top with grated cheese. Bake at 350 degrees for 15 to 20 minutes.
