- 1 medium eggplant, peeled and cubed
- 1 med onion, diced small
- 2 slices toast, cubed
- 1 cup milk
- 4 to 5 Tbsp butter
- 1/4 tsp ground cayenne pepper
- 1 egg
- 3/4 cup grated cheese
- black pepper and salt to taste
Directions

1Cook eggplant with onion in a small amount of salted water until done, and drain.

2Beat 1 egg and add to milk, pour over toast cubes and allow to set a few minutes. To eggplant add cheese, butter, black and red pepper.

3Top with grated cheese. Bake at 350 degrees for 15 to 20 minutes.
