- 5 to 6 slices bread, toasted and cut into small pieces
- 1 medium eggplant, cubed and parboiled
- 1 lb. hot sausage, cooked and drained
- 1/2 c. diced celery
- 1/2 c. diced pepper
- 1 c. chopped green onions
- 1 c. stewed tomatoes, drained
- 1 c. sharp cheese, cut into small pieces
Directions

1Grease 2-quart baking dish; cover bottom with bread pieces. Top with eggplant, celery, pepper and onions, sausage and tomatoes.

2Cover and bake at 350° for 45 minutes.

3Add remaining bread crumbs and cheese.

4Return to oven 3 or 4 minutes until cheese melts.
