  • 1 medium eggplant, pared
  • 2 Tbsp. butter
  • 2 well beaten eggs
  • 1/2 c. bread crumbs
  • 1 small onion, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. Parmesan cheese

Directions

    Cook eggplant in a little water; mash.

    Beat well.

    Saute onion in butter.

    Add to mashed eggplant with salt and pepper. Turn into greased 1-quart casserole.

    Top with bread crumbs and cheese mixed together.

    Bake in preheated oven at 375° for 30 minutes.
