- 1 medium eggplant, pared
- 2 Tbsp. butter
- 2 well beaten eggs
- 1/2 c. bread crumbs
- 1 small onion, chopped
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. Parmesan cheese
Directions

1Cook eggplant in a little water; mash.

2Beat well.

3Saute onion in butter.

4Add to mashed eggplant with salt and pepper. Turn into greased 1-quart casserole.

5Top with bread crumbs and cheese mixed together.

6Bake in preheated oven at 375° for 30 minutes.

7Serves 4.
