- 1 large eggplant
- 1 Tbsp. salt
- 3 Tbsp. olive oil
- 10 garlic cloves, minced
- 1/2 c. water
- 1 Tbsp. all-purpose flour
- 1 Tbsp. mayonnaise
Directions

1Peel, cut and cube the eggplant; leave soaking in water with salt for 15 minutes.

2Saute in pan 1/2 of the garlic in olive oil. Drain eggplant well and add to garlic.

3Cook until eggplant is soft.

4Dissolve the flour in 1/2 cup water, then add to eggplant. Stir until thickens.

5Mash with fork.

6Add the other 1/2 of garlic, salt and mayonnaise.

7Serve with onion pita bread.
