Eggplant Dip

Ingredients

  • 1 large eggplant
  • 1 Tbsp. salt
  • 3 Tbsp. olive oil
  • 10 garlic cloves, minced
  • 1/2 c. water
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp. mayonnaise

Directions

    Peel, cut and cube the eggplant; leave soaking in water with salt for 15 minutes.

    Saute in pan 1/2 of the garlic in olive oil. Drain eggplant well and add to garlic.

    Cook until eggplant is soft.

    Dissolve the flour in 1/2 cup water, then add to eggplant. Stir until thickens.

    Mash with fork.

    Add the other 1/2 of garlic, salt and mayonnaise.

    Serve with onion pita bread.
