  • 1 large eggplant
  • 1 clove garlic, minced
  • 2 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh ginger, chopped
  • 1 Tbsp. soy sauce
  • 1/2 tsp. granulated sugar
  • 1/4 tsp. pepper
  • 1/4 c. sesame seed, toasted

    Prick the eggplant several times; place on a plate and microwave, uncovered, on High for 6 minutes or until eggplant is tender and collapses.

    Allow to cool in the refrigerator for 30 minutes.
