- 2 Tbsp. olive oil
- 1 Tbsp. fresh ginger, chopped
- 1 Tbsp. soy sauce
- 1/2 tsp. granulated sugar
- 1/4 tsp. pepper
- 1/4 c. sesame seed, toasted
Directions

1Prick the eggplant several times; place on a plate and microwave, uncovered, on High for 6 minutes or until eggplant is tender and collapses.

2Allow to cool in the refrigerator for 30 minutes.
