- 2 lb. eggplant
- 1 pkg. cornbread mix
- 1 1/2 c. milk
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 1/2 c. bell pepper
- 1 can cream of chicken soup
- 1 tsp. poultry seasoning
- grated cheese
Directions

1Bake cornbread according to package directions.

2Set aside. Cook eggplant and mash.

3Add crumbled cornbread and milk to mashed eggplant.

4Saute celery, onion and green pepper.

5Add cream of chicken soup and poultry seasoning.

6Mix all together and bake at 350° for 1 hour.

7Fifteen minutes before you take it out of oven, add cheese (grated) to top of casserole, enough to cover.
