  • 1 or 2 eggplants
  • 1 pkg. seasoned bread crumbs
  • 1 small or large onion
  • 4 stalks celery, diced
  • 2 eggs
  • 1/2 tsp. sage or to taste
  • 1/2 tsp. poultry seasoning or to taste

    Peel off outside eggplant and cut into wedges. Boil completely in salted water with pepper and little butter. When soft, drain and set aside.
