Ingredients
- 1 medium eggplant, peeled and cut up
- 1/2 can Ro-Tel tomatoes
- 1/2 can mushroom soup
- 1 egg
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 clove garlic
- 1 medium onion
- 1 green pepper
Directions

1Peel and cut up eggplant.

2Add a little water and cook for 10 minutes.

3Drain it and mash it up.

4Add remainder of ingredients. Pour into greased casserole.

5Top with 1 1/2 cups grated cheese and 1 1/2 cups buttered crackers.

6Bake for 30 minutes at 350°.
