  • 1 large eggplant
  • 1/4 c. butter
  • 1/4 c. grated onion
  • 2 tsp. Worcestershire sauce
  • 2 c. cracker crumbs, fine
  • 1/2 tsp. salt
  • 1/2 c. grated cheese

Directions

    Peel and cube eggplant; cook until tender, stirring often. Remove from heat. Add butter, onion, salt and Worcestershire sauce. Blend together; blend well and add crumbs to absorb all liquid. Cover with cheese. Bake at 350° for 20 to 25 minutes.
