- 1 large eggplant
- 1/4 c. butter
- 1/4 c. grated onion
- 1/2 tsp. salt
- 2 tsp. Worcestershire sauce
- soda crackers
- 1/2 c. grated Cheddar cheese
Directions

1Peel and cube a large eggplant into 1-inch pieces.

2Cook until tender in as little water as possible about 5 minutes.

3Stir frequently to cook all the cubes.

4Remove from heat; add butter, grated onion, salt and Worcestershire sauce.

5Blend all ingredients and add crumbled crackers, until all moisture is absorbed.

6Place mixture in a greased 1-quart baking dish; cover with grated cheese and bake

7in 400° oven about 20 minutes, until thoroughly heated and cheese is slightly browned.

8Serves 6.
