  • 1 eggplant
  • 1 onion Diced
  • 7 1/4 ounces tomato sauce
  • 2 tablespoons extra virgin olive oil
  • salt

Directions

    1.) Preheat oven to 350 degrees.

    2.) Cut The eggplant in halves and place face down on a baking sheet. Bake for 40 minutes.

    Once the eggplant is done, take a skillet and add the oil.

    Dice the onion and place in the skillet. Cook the onions until translucent.

    Peel the skin off the eggplant and finely chop. Add the eggplant to the skillet with the onions.

    Add the tomato sauce to the skillet. Cook until the eggplant mixture is coated in the tomato sauce and the onions are evenly distributed.

    Add salt and pepper to taste.

    Serve with bread.
