  • 1 eggplant, peeled and cubed
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tomatoes, peeled and cut into eighths
  • 1 can tomato paste
  • lemon juice (use 1 lemon and squeeze for juice)
  • salt
