- 2 large eggplant
- 1/4 medium onion, finely chopped
- 1 to 2 cloves garlic, minced
- 3 Tbsp. olive oil
- 4 oz. grated Cheddar cheese
- 1 egg
- 1/4 c. dried bread crumbs
- salt and pepper to taste
Directions

1Peel and cut eggplant into pieces; cook until soft.
