  • 1 c. milk
  • 1 egg
  • 1 pkg. Mozzarella cheese
  • 1 (16 oz.) carton Ricotta cheese or cottage cheese
  • 1 pkg. grated Parmesan cheese

    Peel eggplants and cut into round slices (about 1/8-inch thick). Dip in milk and egg batter, then dip in flour and fry until brown. Drain on paper towels.
