  • 1/4 tsp. basil
  • 1/2 clove garlic, crushed
  • 1 tsp. salt
  • 1 eggplant, sliced
  • oil
  • 1 c. Ricotta or cottage cheese
  • 2 Tbsp. parsley
  • 3 Tbsp. Parmesan cheese
  • 4 oz. Mozzarella cheese, thinly sliced
