  • 1 large eggplant, cut into 1/4-inch thick slices
  • 2 Tbsp. flour
  • 1/8 tsp. pepper
  • 1 (8 oz.) pkg. Mozzarella cheese, grated
  • 3 Tbsp. coarse (kosher) salt
  • 1 c. milk
  • 1 c. no-salt spaghetti sauce

    Layer in baking dish:

    eggplant, sauce and cheese.

    Take milk and flour, make into a white sauce and pour on top.

    End with cheese on top.

    Bake at 350° for 30 minutes or until hot.
