Ingredients
- 1 tomato, diced
- 4 mushrooms, sliced
- 1 sweet red pepper, sliced
- 1/2 c. pitted black olives
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 pinch basil
- 1 c. tomato sauce
- chicken broth
- 1 tsp. minced garlic
- 1 eggplant, peeled, sliced, breaded and fried
Directions

1Put all ingredients except eggplant into a frying pan.

2Bring to a boil and let simmer until sauce has thickened.

3Place 1/2 teaspoon butter or margarine on sheet pan.

4Lay out eggplant and top with ingredients from frying pan.

5Bake at 450° for 15 minutes.
