Eggplant Margarita

Ingredients

  • 1 tomato, diced
  • 4 mushrooms, sliced
  • 1 sweet red pepper, sliced
  • 1/2 c. pitted black olives
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 pinch basil
  • 1 c. tomato sauce
  • chicken broth
  • 1 tsp. minced garlic
  • 1 eggplant, peeled, sliced, breaded and fried

Directions

    Put all ingredients except eggplant into a frying pan.

    Bring to a boil and let simmer until sauce has thickened.

    Place 1/2 teaspoon butter or margarine on sheet pan.

    Lay out eggplant and top with ingredients from frying pan.

    Bake at 450° for 15 minutes.
