- 1 large eggplant
- 2 eggs
- 1 c. dry bread crumbs
- 3 Tbsp. oil
- 1 jar spaghetti sauce
Directions

1Slice eggplant 1/4 inch thick; dip in beaten eggs, then in bread crumbs (2 times).

2Fry in oil until brown.

3Drain on paper towels.

4In a large baking pan (sprayed with Pam) layer the eggplant, then spaghetti sauce and the Mozzarella cheese.

5Bake for 30 minutes in a 350° oven.
