- 1 large eggplant
- 1 large jar Prego with mushrooms and onions
- 8 oz. shredded Mozzarella cheese
- bread crumbs
- egg
- onions
- garlic (gloves)
- salt
- pepper
- olive oil
- Parmesan cheese
Directions

1Peel and slice eggplant; coat slices in salt and allow to sit for 30 minutes.

2In saucepan heat Prego sauce, adding additional chopped onion and garlic (salt and pepper to taste).

3Allow to simmer while preparing eggplant.

4Rinse salt off eggplant slices. Dip each slice in egg and then in bread crumbs.

5Fry in olive oil until lightly brown.
