- 2 medium eggplant
- 1 1/2 c. cornbread crumbs
- 2 eggs, beaten
- 1 onion, chopped
- 2 small cans tomato sauce
- 1/2 lb. sliced cheese
- 1/2 lb. ground beef
- 1/2 tsp. garlic powder
- salt to taste
- 1 stick butter
- 2 bell peppers, chopped
Directions

1Cook ground beef, onion, bell pepper, garlic and salt.

2Set aside.

3Wash and peel eggplant; slice into rounds.

4Dip into beaten egg and roll in crumbs.

5Melt butter, 1/4 stick at a time, in a skillet and brown eggplant on both sides.

6Put eggplant in casserole dish, add a layer of meat mixture, cover with tomato sauce and top with cheese.

7Bake at 350° for about 30 minutes or until bubbly.
