- 1 c. Parmesan cheese
- Italian bread crumbs
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. oregano
- 1/2 c. oil
- 2 eggs, beaten
- tomato sauce
- grated Mozzarella cheese
Directions

1Mix Parmesan cheese, bread crumbs, garlic, salt, pepper and oregano.

2Slice

3eggplant and dip in egg mixture, then in other mixture.

4Fry until golden brown.

5Place in baking dish and cover with sauce and Mozzarella cheese.
