Eggplant Parmesan

Ingredients

  • 2 eggplants
  • 4 eggs, beaten with a little milk
  • 2 c. seasoned bread crumbs
  • 1/2 c. grated Romano cheese
  • 1 qt. spaghetti sauce
  • 1 lb. sliced Provolone cheese
  • 1 lb. browned ground beef or 1 lb. Italian sausage
  • cooking oil

Directions

    Peel and slice eggplant lengthwise, about 1/4-inch thick.

    Dip in egg, then bread crumbs.

    Fry in oil, changing if necessary. Drain well on paper towel.

    In a 9 x 12-inch pan, scoop sauce on bottom.

    Then place eggplant meat and both cheeses.

    Repeat in layers until ingredients are done.

    Cover with sauce.

    Cover with foil and bake at 350° for 25 to 30 minutes.

    Let stand before cutting and serving.
