Eggplant Parmesan

Ingredients
- 2 eggplants
- 4 eggs, beaten with a little milk
- 2 c. seasoned bread crumbs
- 1/2 c. grated Romano cheese
- 1 qt. spaghetti sauce
- 1 lb. sliced Provolone cheese
- 1 lb. browned ground beef or 1 lb. Italian sausage
- cooking oil
Directions

1Peel and slice eggplant lengthwise, about 1/4-inch thick.

2Dip in egg, then bread crumbs.

3Fry in oil, changing if necessary. Drain well on paper towel.

4In a 9 x 12-inch pan, scoop sauce on bottom.

5Then place eggplant meat and both cheeses.

6Repeat in layers until ingredients are done.

7Cover with sauce.

8Cover with foil and bake at 350° for 25 to 30 minutes.

9Let stand before cutting and serving.
