  • 1 medium eggplant (approximately 3/4 lb.)
  • 2 eggs, beaten
  • 1 c. Italian-style bread crumbs
  • 3/4 c. olive oil
  • 1 Tbsp. Italian herb seasoning
  • 15 oz. Ricotta cheese
  • 1 (14 oz.) jar spaghetti sauce
  • 6 oz. Mozzarella cheese, sliced
  • 1/2 c. grated Parmesan cheese

    Cut eggplant crosswise into 1/2-inch slices.

    Dip into beaten eggs, then in bread crumbs.

    Slowly heat oil in large frypan. Saute eggplant until lightly browned, about 2 minutes each side. Drain.
