- 1 medium eggplant (approximately 3/4 lb.)
- 2 eggs, beaten
- 1 c. Italian-style bread crumbs
- 3/4 c. olive oil
- 1 Tbsp. Italian herb seasoning
- 15 oz. Ricotta cheese
- 1 (14 oz.) jar spaghetti sauce
- 6 oz. Mozzarella cheese, sliced
- 1/2 c. grated Parmesan cheese
Directions

1Cut eggplant crosswise into 1/2-inch slices.

2Dip into beaten eggs, then in bread crumbs.

3Slowly heat oil in large frypan. Saute eggplant until lightly browned, about 2 minutes each side. Drain.
