- 1 medium-large eggplant
- 1/2 stick butter
- 1/2 Cheddar cheese
- 1 stick celery
- salt and pepper
- 1 pkg. soda crackers
- 1 egg
- 1 medium onion
- 1/4 c. milk
Directions

1Peel eggplant, cut into cubes.

2Dice onion and celery.

3Cook until tender, drain and mash.

4Add other ingredients to mixture and mix well.

5Pour mixture into a greased glass pie plate or shallow baking dish.

6Bake at 350° for 30 to 45 minutes.
