Ingredients
- 1 large eggplant (unpeeled), diced into 1/2-inch cubes
- 2 Tbsp. oil
- 1 large onion, diced
- 1/4 c. tomato paste
- wine
- salt and pepper
- oregano
- basil
- thyme
- 1 c. grated Swiss or Gruyere cheese
- 1/4 c. Parmesan or Romano cheese
Directions

1Heat oil in skillet.

2Add eggplant; stir constantly over medium heat until soft.

3Remove from pan.

4Add onion and garlic to same pan; saute until clear.

5Add eggplant back.

6Add tomato paste, salt and pepper and healthy pinches of herbs.

7Sprinkle liberally with any kind of wine.

8Simmer over low heat; remove from stove and let cool.
