Eggplant Pizzas

Ingredients
- 1 1/2 lb. eggplant
- 2 eggs, beaten
- 2 c. bread crumbs
- cooking spray
- 1 small green pepper, minced
- 4 oz. mushrooms, sliced
- 2 Tbsp. vegetable oil
- 2 c. tomato sauce
- 1 tsp. dried oregano
- 6 oz. Mozzarella cheese, shredded
Directions

1Wash eggplant.

2Cut off ends.

3Leave skin and cut in 1/3-inch slices.

4Dip in egg, then bread crumbs.

5Place on baking sheet sprayed with cooking oil.

6Broil until crumbs are brown, about 1 minute per side.

7Saute pepper and mushrooms in vegetable oil.

8Set aside.

9Place spoonful of sauce and a pinch of oregano on each. Add peppers and mushrooms.

10Top with cheese.

11Broil until cheese melts, 1 minute.
