  • 1 medium eggplant (peeled, sliced, and boiled tender)
  • 1 egg
  • 1/2 C. sugar
  • 1 C. flour
  • 1 tsp. baking powder

Directions

    Drain and mash cooked eggplant.

    Add egg, sugar, flour and baking powder.

    Drop small amounts from teaspoon into hot deep fat.

    Turn when brown.
