  • 1 lg. eggplant
  • 1 tsp. paprika
  • 1/2 tsp. turmeric
  • 1/2 tsp. salt
  • 1 tbsp. sugar
  • 1 cup vegetable oil

Directions

    Cut the eggplant crosswise to make 1/3-inch thick slices.

    Mix spices in 1/8 cup of water and rub it on each eggplant slices.

    Fry on a non-stick frying pan at medium heat; flip once after about 10 minutes.

    Sprinkle sugar just before the end of frying.
