Ingredients

  • 1 eggplant, peeled and cubed in about 1/2-inch cubes
  • 2/3 c. chopped celery
  • 1 onion, chopped
  • 1 small green pepper, chopped
  • 1/2 c. oleo, melted
  • 1 c. grated Cheddar cheese
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg, well beaten
  • crackers, crumbled

Directions

    Boil the eggplant until tender. Drain well. Saute celery, onion and green pepper in oleo.

    Put eggplant and celery mixture into 1 1/2-quart casserole and add other ingredients; mix well. Bake at 350° until browned.

    May be made a day ahead or frozen for future use.
