- 1 eggplant, peeled and cubed in about 1/2-inch cubes
- 2/3 c. chopped celery
- 1 onion, chopped
- 1 small green pepper, chopped
- 1/2 c. oleo, melted
- 1 c. grated Cheddar cheese
- 1 tsp. Worcestershire sauce
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 egg, well beaten
- crackers, crumbled
Directions

1Boil the eggplant until tender. Drain well. Saute celery, onion and green pepper in oleo.

2Put eggplant and celery mixture into 1 1/2-quart casserole and add other ingredients; mix well. Bake at 350° until browned.
